Super Easy & Delicious Tortilla Pizza and Pesto Pasta

So during the weekend mom and I thought it would be fun to make pizzas with the kids and each of them could create their own pizza. Mom usually makes dough from scratch, but we wanted to try something different especially with how difficult it is right now to get ingredients. So we improvised with stuff around the kitchen. We settled on using tortillas for the crust and basic tomato sauce for the sauce base. We also made one with bbq sauce (which was SO delicious).

We used mozzarella cheese, and cut up some leftover chicken, hotdogs, and diced some bell peppers, onions, and cilantro (because we didn't have any basil). Baked in the oven at 400 degrees between 10-15 min depending on the size of tortilla used and the amount of toppings. I kind of just watched them until the crust started turning golden brown. Let me tell you, these pizzas turned out so good and will definitely work in a pinch. It's such a great activity to do right now too if you have kids or even if it's just you.

Blue Avatar Pancakes

Elizo’s favorite color is blue and his favorite food are pancakes, so my mom came up with blue pancakes that I have dubbed, “Avatar Pancakes.” She got this new blue organic food coloring from amazon the other day. It’s called pure blue spirulina powder. Apparently it’s a super food. She added it into her pancake recipe and they came out so super cute! She was in a hurry, so she didn’t make the recipe from scratch, but just added it to Krusteaz pancake mix.

Delicious & Easy Avocado Toast

Okay, so I know I’m late hopping on the avocado toast train, but mom just made these one day and I don’t know how I lived so long without them. They’re super easy to make and I decided to document it for you guys, because I know there are some people out there like me that are clueless about making most foods, but I just know I want to eat it. Also, everything but the bagel seasoning is so good!!!

My sister also made me this concoction of juice and emergen-C and it tasted like our childhood favorite Flintstones ice cream pops. A touch of something new (For me) and nostalgia; a winning combination. Stay tuned for more food posts and in depth recipes and possibly YouTube videos!
